Sameli (Greek Semolina Cake with Mastika Chios and Syrup)
500g (1.1 lbs.) fine semolina
250g (9 oz.) sugar
50ml (1/5 cup) milk
150ml (2/3 cup) water
2.5g baking powder
2.5g baking soda
2.5g mastika (crushed to a powder)
Ingredients for syrup:
600ml (2.5 cups) water
750g (1.8 lbs.) sugar
Zest of 1 lemon
To make the syrup, place the water, sugar, lemon zest, and juice in a saucepan over low heat. Stir with a wooden spoon to dissolve the sugar, and then gently bring to a boil. Reduce heat and simmer for 15 minutes. Leave to cool.
Dissolve the baking soda in 150ml (2/3 cup) water in a large bowl.
Add all other ingredients to the bowl and mix well.
Grease a large baking tin with olive oil.
Pour mixture into oiled baking tin.
Leave for about 30 minutes until a crust forms on the surface.
Bake in oven at 200°C (390°F) for 30 minutes. Remove from oven, mark into slices, lightly, with a knife, return to oven for another 30 minutes.
